LEMON/LIME BUTTER

 

2 eggs, beaten (room temperature)

Grated rind and juice 3  limes or Lemons

2/3 cup sugar

60g butter

 

1.        Combine all ingredients in the top part of a double saucepan.  Stir with a wooden spoon over simmering water until thickened.

2.       Pour into a warm jar and seal airtight.  This keeps very well.
